Seasons greetings to the few members who are still around. Yesterday my next door neighbour tapped the kitchen window as she had brought me some breaded perch she had just cooked. This would have been caught by one of the villagers on the Drava. It tasted very nice but there were loads of bones. I noticed she had left the main backbone in place, something I have noticed before with fish cooked by the villagers. Is this usual in Croatia or do people normally fillet large fish like we would in UK?

Most fresh water fish are very boney especially if thay are round fish even if you fillet it you would need to pull the bones out with plyers be for cooking unless you do them like a herring open flat head and tail off then pull back bone out with most of the fine side bones

With you on that thay can be a bit muddy at time's but if thay come from running water thay are fine and you can soak them in brine for a hour or so after filleting them a good substitute for cod and chips
