Depends totally on where you want to start from in the UK. If from the north E Anglia then take North Sea Ferries or Stena to Holland and then blast through Holland and Germany into Austria on day one arriving in Istria after an easy drive the next morning. If you have two drivers you can do it in one hit but it is hard work. If driving from the south then the Dover Calais etc down through France avoiding Switzerland into Italy and across. There is not a lot to choose between either route, but I prefer the German route because the traffic tends to be lighter and the roads faster (and my French is very poor!). With 3 drivers at least one of you can be resting at all times which makes it easier. As one of my colleagues in Croatia says '1 day across Europe and 2 days to drive through Croatia'

Almost all Croats driving from the UK to Croatia prefer the German route: France - Belgium - Frankfurt - Munich - Salzburg - Slovenia and Istria.
