When Croatia is in the EU will it be or is it possible to have monies from the sale of a property paid directly into the UK or do you have to have it paid into a bank account here in Croatia? (Haven't seen the book keeper about this yet). Any knowledge or experience would be appreciated.

bookkeeper??? Does that mean your company owns the property, not you personally?
The owner of the property must be the recipient of the sale proceeds, so if that's your company, then that is what must be paid. I am guessing that your company does not have a UK bank account, so its going to be the Croatian company bank account that will be used.
If you are the personal owner (and just happen to have a book keeper anyway), then theoretically you could get the money paid into your bank account out of Croatia but you may hit a wall when you try to get the notary in Croatia to process the sale paperwork.
A property transfer - whether the seller owned it privately or via a company - needs to be assessed by the tax office in Croatia to see whether there are any taxes due and obviously Croatia likes to make it easier to collect these taxes by encouraging the money to go to a Croatian bank account. So, the system is set up to push you into that.
